The Quinoa Oatmeal Bake was turned out well. It may lack a little taste and richness because I did not use the butter, sugar or egg. I substituted stevia for the sugar and did not substitute for the egg or butter other than to add a little extra coconut milk. Overall, it is tasty and will give me at least 3 breakfasts. Take a look at my blog post from yesterday to get the complete recipe. I added my substitutions in parentheses. It does take work to be gluten free and also be free of the 6 other foods that I'm taking out of my diet for 21 days. I welcome your comments and ideas. The 6 other foods I'm removing are dairy, corn, soy, peanuts, eggs, sugar/artificial sweetener. If you've done "The Virgin Diet", please let me know. I would love to know how things turned out.
